RECIPE/resep

140g tomato

40g garlic

 60 shallot

10g green chili big

20g red chili small spicy

60g palm sugar

6g white sugar 

~ frying with little oil the ingredient , strain the oil, when warm mix wit palm sugar and white sugar and salt to balance

PICKLE

PINEAPPLE

for water

100g rice wine vinegar mizkan

60g rice wine (mirin)

46g white sugar

170g vegetable stock or normal water

-Heat all ingredients and pour over sliced pumpkin circles 

and mix wit after warm with :

pineapple chunky, carrot julienne, cucumber slice, green chili

let in cold room until mixing the fragrance . 


RICE CRISPY (HAND MADE)

~ left over rice from yesterday , dehydrated under sunlight, and frying in the hot clean oil

TOFU BACEM
~1 pcs tofu cut half be triangle, frying until golden brown, 
when cold mix with sambal and on the top sprinkle the crispy rice ac much you want 

200 gram red rice,
 wash two time and soaking 15 minutes with cold water, drain, and cook with rice compare water . ( rice 200 : water 100)
when cooked keep in cold room until tomorrow to use for fried rice

BALANCE  TASTE for sauté

Sunflower oil

Shaved garlic ( slice)

Shaved shallot (slice)

Sesame oil

Arak masak/angciu

Chinese light soy

Sea salt and white pepper

vegetable

kernel corn or you change like you want


method:

- sauté shallot/garlic slice with sunflower oil until aroma comes and mix egg

add red rice cooked, sauté until warm and vegetable , and add balance taste each half spoon

last salt/pepper to normally the taste.

and plating as beauty plating as you want,  hehehe smile,
